About the Whiskey
Every grain in every whiskey on this list was grown on our own place here in Bell County — corn, wheat, rye, oats. Cut in our fields and carried a few hundred yards to the still, where we mill, ferment, distill, barrel and bottle it.
We are not sourcing it. We are growing it.
The Experiments
Two runs that did not go our way. The single malt was floor malted by hand here and kilned over mesquite and oak cut on this place — that is where its smoke comes from, not a peat bog in Scotland. It gave five bottles; the oat gave eight, both for several times the work of a normal run. Poured an ounce at a time until gone. Not sold by the bottle.
The Rum
Riverbend Rum — unaged, Bell County. Twenty-six bottles made. Bar use only.
Everything on this list is poured in the tasting room, and the bottles go home from there. The full bar menu has the cocktails.
